Instructions:
- First Preheat the oven to about 400°F (200°C).
- Take a large bowl, combine nicely diced sweet potatoes with 1 tbsp olive oil, salt, and pepper.
- Next line all the sweet potatoes in one layer on a baking sheet
- Roast them ( 20-25 min) until tender and lightly browned.
- In a large mixing bowl, place the black beans, chopped red bell pepper, red onion, jalapeño pepper, and nicely chopped cilantro.
- Take a separate small mixing bowl, whisk together the fresh lime juice, 1 tbsp olive oil, ground cumin, chili powder, salt, and pepper to taste
- Add the roasted sweet potatoes to the mixture together with the lime-cumin dressing.
