Grilled chicken and vegetable skewers recipe
Ingredients:
- 2 chicken breasts, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced into rounds
- 1 red onion, cut into chunks
- 2 cups mixed greens salad
- Salt and pepper, to taste
- Olive oil, for brushing
Instructions:
- First put the wooden skewers in water for about 30 minutes before grilling . It will prevent them from burning.
- Preheat the grill to medium-high heat.
- Place the chicken and vegetables onto skewers, alternating between them .
- Brush the skewers with olive oil
- Sprinkle on top with salt and pepper.
- Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked well and vegetables are all tender to taste.
- Serve the skewers with two cups of fresh mixed greens salad on the side and enjoy.
